NOTICE: We will have adequate amounts of Refried Beans, Freshly Shredded cheese (Cheddar & Pepper Jack), Sour Cream, Rice, Freshly made Pico de gallo, Guacamole, Grilled Onions & mushrooms,  Grilled Garlic Jalapenos, salsa, and chile con queso. We can also grill Quesadillas. Our tortillas will be made fresh @ 2:00pm of the event dinner date (16+ dozen), Tortillas served warm at event time. NO USE OF MICROWAVES to heat food. 🙂 All wood smoked pellet grills and smokers. MY SPECIAL HARDWOOD RECIPE: 25% Jack Daniels Blend (charcoal mixed with oak) and 75% Traeger Gourmet Blend (50% Maple 25% Hickory 25% Cherry wood).  All chicken and steak fresh and marinated for 24 hours.  The above means RESTAURANT QUALITY FOOD!

    • Traditional Fajitas

      Fresh Angus Beef Skirt Steak Fajitas (Pappasito's Marinade Recipe) Served with Lime or Orange

      Venison "Backstrap & Tenderloin" Marinated Fajitas A Los Cucos (Onions, mushrooms & Chardonnay )

      Marinated Chicken Breast Fajitas (Grilled with white onions and bell peppers) Breasts Stuffed with fresh minced Garlic and Jalapeno. Topped with a Chardonnay cheese sauce with  diced mushroom.

    • Quesadillas

      Fresh Tortillas with chicken/steak, cheese, Pico de Gallo, grilled onions , and guacamole.

      Grilled in a wood pellet grill for that Wood taste! Expensive, but worth the taste!

    • Mexican Stir-fry

      You tell me what to add, and I will add to the 14" wok.

      Corn, rice, queso, jalapenos, bell peppers, pico de gallo, onion, chicken or steak or BOTH, Beans and salsa.

    • Stuffed Mexican Seafood Eggplant

      Stuffed with Fresh Seafood (Gulf Shrimp, Scallops and Lump crab meat) and cheese. Topped with sauteed pico de gallo, vegetables. Then Chile con Queso drizzled on top.  Freshly Shredded Cheddar & Pepper Jack to finish it off.

    • Taco Salad

      Chicken or steak. Refried beans, Guacamole, Fresh Cheese, lettuce, pico de gallo, and sour cream.

    • Mexican Platter (Table of 6-7)

      Ribs, Pork, Steak Fajita, Chicken, Venison, Jumbo Gulf Shrimp, Sea Scallops and Lobster tail. Comes with tortillas, fresh pico de gallo, guacamole,  rice, cheese, sour cream, and re-fried beans. This platter is topped with Jalapenos, Mango, pineapple, lime and orange slices.

    • The Wholly Habanero

      When working with this pepper, You first remove the stem,  remove the girth and seeds then dice it up. Next, press it through a garlic press. rendering minced pepper and a juice. I use this pepper sparingly. Add mango to a little of this to a dish, and it adds some serious flavor. Works well with other spices and vegetables like garlic, onion, mushrooms. If you want to add a Habanero taste to your dish, please ask for it.

      MILD OR HOT?   If you have never had Habanero, I would recommend MILD. I never use Serrano peppers. Just a personal preference. Fresh Jalapenos, and very small amounts of Habanero is quite tasty also.

      All on a natural wood pellet Grill for that extra taste.
