BRYAN BANEK’S Baby Back Pork Ribs
Cooking Time: ~5 hours
Cooking temperature: 225 degrees Fahrenheit
BBQ Baste: Stubb’s Original BBQ Sauce
Type of Rib: Pork Baby Back
Yield: 8 full sized racks of Ribs
Type of seasoning (RUB) : TexJoy BBQ Seasoning 16 or 32 oz
Type of Smoker Used: MasterBuilt 4 rack Electric Smoker ($365 Shipped). Comes with temp remote.
Type of wood: Mostly oak, some pecan and very little mesquite
The night before Rub all racks of ribs (BOTH SIDES) with TexJoy (Place in Fridge overnight)
Set Digital timer for 5 hours and 225^F (Don’t Preheat, Cold Smoke Ribs for 30-40 minutes)
Place 2 Racks of ribs (Meaty Side up) per rack in the smoker
Fill the water tray (at least half full)
Add wood every 10-15 minutes to smoker
After about 1 hour and 30 minutes, pull ribs off smoker (Evenly apply Stubb’s BBQ Sauce) and place in Tin Foil (Wrap them 2 rack each) Make sure of a good seal of foil around the meat. Double wrap with tin foil. You want to steam the ribs with the moisture (Juices). Make sure not to tear foil in smoker. Place ribs back in smoker.
Use very little wood now for next 3+ hours, just enough wood to keep temp @ 225^F
Make sure the ribs obtain an internal temp of 165^F with cooking temp probe.
Remove ribs and place in container with towels covering to properly cool the ribs for 30 minutes. Then remove ribs from tin foil!
